Happy Halloween! Growing up we always used to carve pumpkins…and bake the seeds! Salt, Pepper, and Olive Oil did the trick! But sometimes it’s nice to change things up. Below I have shared a simple recipe for Pumpkin Seeds that can be used as a snack, or mixed in with a salad.

Did you know that Pumpkin Seeds are full of quality protein? 100 g of seeds contain 56% of the recommended daily allowance (RDA). Also, Pumpkin Seeds are an excellent source of amino acids. Enjoy!

Ingredients:

-1/2 cup Pumpkin Seeds

-1 1/2 tsps. Extra Virgin Olive Oil

-1 tbsp. Maple Syrup

-1/4 tsp. Sea Salt

-1/4 tsp. Cinnamon

 

Directions:

1. Preheat the oven to 300 F and line a baking sheet with parchment paper.

2. Add all ingredients to a mixing bowl and mix well. Spread seeds across the baking sheet.

3. Place in the oven and bake for 30-40 minutes or until golden brown. Stir at the halfway point.

4. Remove pumpkin seeds from the oven and let cool. Break into pieces and enjoy!

 

Additional Notes:

1. This recipe was created and tested using fresh pumpkin seeds. It is a great one to whip up with leftover seeds from any type of squash.

2. No Fresh Seeds: Use store-bought pumpkin seeds instead. Since they have already been dried, cut the time down in the oven to 20 minutes.

3. Storage: Once completely cooled, store in an air-tight container at room temperature.
